The Medical Science Side Of The Story
In the Journal of Medicinal Food the study “Cellular Antioxidant and Anti-Inflammatory Effects Of Coffee Extracts with Different Roasting Levels” by Jung Saahon, Kim Min Hyung, Park jae Hee, Jeong Yoonhwa, and Ko Kwang Suk, showed that during the coffee roasting process there are large changes that occur in the composition & physiological effects of coffee beans. In the study green coffee extracts of arabica coffee were investigated. The focus was on different roasting levels (light, medium, city, and French roast). The caffeine level for each coffee roast did not show any major difference or change, but the total chlorogenic acid content did. It was observed that light roasted coffee had a higher level of chlorogenic acid contents compared to the other roast levels. Besides having a higher chlorogenic acid content lighter coffee roasts also had the highest antioxidant activity in the 2, 2- diphenyl-1-picrylhydrazyl (DPPH) assay. Coffee extracts were used to treat AM-12 cells in order to determine the in vitro antioxidant property. Roasting levels also seemed to be negatively related to intracellular glutathione (GSH) concentration and mRNA expression levels of genes related to GSH synthesis. Lipopolysaccharide-treated RAW 264.7 macrophage cells were used to investigate the anti-inflammatory effects of coffee extracts. Similar patterns as the AML-12 cells were observed for cellular antioxidant activity of coffee extracts.
